Kay’s Crockpot Beef Tortellini Veggie Soup

New recipe I made last Sunday that hit the spot after a cold rainy day on the farm. I’m definitely making this one again, I hope you enjoy it too!

Ingredients:

1lb of cooked Kay’s FarmStand Stew Meat

2 large Kay’s FarmStand Tomatoes Diced

2 Large Kay’s FarmStand Bell Peppers

1/2 cup of chopped Kay’s FarmStand Red or Yellow Onion

1-2 cup of Frozen Vegetables Mix (beans, peas, corn, and carrots)

1 teaspoon Dried Parsley

1/2 teaspoon of Dried Rosemary

2 teaspoons Italian Seasoning

6 cups of Vegetable Broth

1- 16 oz bag of Frozen Cheese Tortellini

Fresh Parmesan Cheese for topping (Of course a dairy farmer born and raise would add cheese!!)

Directions:

  1. Cut cooked stew meat into small chunks.

  2. In crockpot, add stew meat, tomatoes, peppers, onions, frozen vegetables, vegetable broth, and tortellini. Stir it all together

  3. Add in parsley, rosemary and Italian season. Stir all together.

  4. Set crockpot on low and cook for 4-6 hours

  5. After cooking let soup cool down before adding parmesan cheese

  6. Enjoy!
